ingredients

  • ¾ cup sugar

  • ¼ cup vegetable oil

  • 1 piece egg

  • 2 cups ube jam

  • 2 teaspoon ube extract

  • 2 cups flour

  • 1 ½ teaspoon baking powder

  • ¼ teaspoon salt

  • violet food color, optional

  • ½ cup powdered sugar, sifted

pROCEDURE

  • In a large bowl, mix the sugar and vegetable oil together untiL combined. You don’t need to overmix—just make sure they are blended.

  • Add the egg and mix until the batter looks lighter in color and slightly bubbly.

  • Add the ube jam and ube extract, then mix until smooth and evenly colored.

  • Slowly add the flour, baking powder, and salt. Mix gently using a spatula or mixer just until you no longer see dry flour. The dough will be very sticky—this is normal and expected. If you want a deeper purple color, add a few drops of violet food coloring and mix gently.

  • Cover the bowl and chill the dough in the refrigerator for 1–2 hours, or overnight if you have time. If you’re in a hurry, place the dough in the freezer for at least 2 hours. Chilling makes the dough easier to handle.

  • When ready to bake, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or foil.

  • Scoop a small amount of chilled dough (about 1–2 inches) and drop it into a bowl of powdered sugar. Roll until fully coated. Don’t worry if it’s messy—powdered sugar helps.

  • Place the coated dough balls on the baking sheet, leaving about 2 inches of space between each cookie.

  • Bake for 10–12 minutes. The cookies will spread and crackle on top—that’s exactly what you want.

  • Let the cookies sit on the baking sheet for 1–2 minutes, then carefully transfer them to a cooling rack. They will firm up as they cool.
